Pumpkin pie green smoothie

Yum! This smoothie can be quite thick - you can either eat it with a spoon or thin it out with more water.


Pumpkin pie green smoothie

Makes 2 small servings

Ingredients

1/2 cup full fat (tinned) coconut milk
1/2 cup water
1/2 tbsp chia seeds

1/8 c pecan nuts
1 tbsp maple syrup or 2 dates
1 c pumpkin puree
1/2 tbsp cinnamon
1 tsp pumpkin pie spice
1 c spinach leaves
ice

Place the first 3 ingredients in the bottom of the Vitamix to soak while you get the other ingredients ready. Add the other items in the order listed, turn on the Vitamix, increase the speed quickly from 1 to 10 and then flip on high speed. Blend for 30 seconds. Enjoy!
